Green Eggs and Ham Mcmuffin

“As a kid the promise of breakfast at Mickey D’s was the only way you could get me excited about going anywhere early in the morning. The Ham Egg Mcmuffin with an extra hash brown was my order every time. I’d put the extra hash brown on the sandwich and top it with a little ketchup. So I decided to create my own version with a few grownup twist. I promise if you keep the eggs a little runny you’ll never go back to the clown.”

Ingredients

1 slice American cheese
2 large eggs
1 toasted English muffins
1 small Russet potato peeled
Canola oil
2 tablespoons butter
Round 3inch cookie cutter
4 slices pan fried Canadian bacon
Salt
Black pepper
1 teaspoon CBD-butter or Canna-butter(optional)


Directions:
Preheat oven to 275 degrees. Using a box grater shred potatoes on the side with the largest holes. Place shredded potatoes in cheesecloth or towel and squeeze out as much water as possible. Use fingers to loosen the potatoes so they’re not mashed together, giving them more surface area to get crispy.

Heat 1/4 in of oil in skillet over medium-high heat. Spoon 3 heaping tablespoons of potatoes into pan use spatula to form potatoes into 3in disc like shape so the hash brown disc fit on to English muffin. When the edges start to brown flip the hash brown and brown on the other side. Transfers latkes to paper towel lined plate. Place hash browns in oven to keep warm.

Crack 2 eggs into a ramekin or very small bowl. Grease cookie cutter with butter. In a small skillet over medium heat place greased cookie cutter in center of skillet. Melt a tablespoon of butter or cannabutter inside the cookie cutter. When butter starts to foam pour in eggs. Press down gently on cutter so eggs do not spill out the bottom. After around 1 minute the eggs should be set enough. Cover skillet and cover on medium heat. I like to use a lid that is smaller than the skillet so it sits on the cutter rather than the skillet helping it cook more evenly.

While still in skillet remove eggs by gently lifting cookie cutter. If the egg sticks to the cutter just apply a little pressure to egg with spoon while lifting cutter. This next step is optional* Add cannabutter to skillet until it melts. Remove from heat, and spoon butter over eggs.

To assemble start with a slice of cheese then the hash brown followed by the eggs bacon then ketchup (optional). Serve immediately.
