Pesto is one of those sauces that goes great on pretty much anything. Pasta, chicken, veggies, seafood and the list goes on. You’ll find it at just about every summer menu. And it’s very easy to make. So let’s put all that basil you planted to good use with this very simple pesto recipe.
Ingredients:
3 cups basil leaves
1/2 cups pine nuts
2 garlic cloves
1/2 cup grated Parmesan cheese
1/4 cup grated pecorino cheese
1/2 cup extra virgin olive oil
1 tsp sea salt
Directions:
In a small skillet over medium heat toast pine nuts for 5 minutes until slightly golden. Remove from heat set aside to cool.
In a food processor pulse basil, pine nuts garlic, cheese until roughly chopped. While food processor is running slow add olive oil. Continue to pulse until pesto is smooth. Transfer to bowl. Season pesto with salt. Use immediately or store in airtight container. Refrigerate until ready to use.
