If you’re not a fan of carbs turn away now because this isn’t one of those deconstruct grilled cheese sandwiches. No! This is actual lasagna sandwiched between to buttery toasted slices of bread. Finding new ways to enjoy holiday leftover is like a sport in many households. And this sandwich is one of those goodies that will have your family members screaming “make me one too”. The recipe is pretty straight forward. Except we’re going to jazz things out with some mouth watering garlic butter.
Ingredients for garlic butter:
8 tablespoon salted butter(1 stick)
4 cloves garlic, minced
1/2 teaspoon onion powder
1 1/2 teaspoon Italian seasoning
Lasagna grilled cheese:
Sourdough bread, sliced
Homemade lasagna, at serving temperature
Mozzarella cheese, thinly sliced
Directions for garlic butter:
In a small bowl combine butter, garlic, onion powder and Italian seasoning. Set aside until ready to use.
Directions for grilled cheese:
Slice lasagna into portions that will fit on bread.
Spread garlic butter on one side of each bread slice. Place one slice of bread butter side down and layer with mozzarella followed by lasagna slices. Top with another bread slice butter side up. Repeat step for as many sandwiches you want to make.
Preheat a cast iron skillet over medium high heat. One sandwich at a time. Cook both sides of sandwich until golden brown about 4 minutes on each side. When flipping use a spatula while holding the top of the sandwich so filling doesn’t fall out. Transfer grilled cheese sandwich to plate and serve immediately.
