Croque Madame Waffle Sandwich

With a year like 2020 I knew I’d be hitting the sauce pretty hard New Year’s Eve in a attempts to maybe forget all the craziness that took place all year. Maybe I was hoping when I woke up New Year’s Day I’d have no recollection of Covid or the fact I’ve been in the house a year straight with no end in site. Either way I knew I would need something to get other the massive hangover I had coming my way. So being the foreword thinking guy I am, I decided to put together a breakfast sandwich that would cure any woes 6 gin and tonics threw my way. So after some easy storming I came up with the “Croque Madame Waffle”. But using a regular waffle recipe for this sandwich simply wouldn’t due. So the day before New Years I whipped up some scallion waffles. The yeasty flavor makes these perfect for a sandwich.

Ingredients

Béchamel Sauce:
3 tablespoon butter
2 tablespoon flour
1 3/4 cups warm milk
1/2 cup grated Parmesan cheese
1/8 tablespoon ground nutmeg
Kosher salt
White ground pepper

Sandwich assembly:
4 Scallion Waffles
2 fried eggs
Whole grain mustard
Sliced Gruyere or Swiss cheese
Sliced Ham
Béchamel Sauce
1 scallion, thinly sliced


Directions for béchamel:
In a sauce pan over medium high heat melt butter until it starts to foam. Add flour an cook for 5 mins. Make sure flour doesn’t get dark or burn by stirring often with a wooden spoon. Next slowly whisk in milk. Bring to a gentle boil then lower heat to a simmer. Continue to whisk. Add salt, pepper and nutmeg. When the béchamel has reached desired thickness whisk in Parmesan. Add more salt and pepper if needed. The béchamel can be made the night before. Transfer to a bowl cover and refrigerate.

Directions for Croque Madame:
Heat oven to 400 degrees. Arrange two waffles on a baking sheet. Spread a thin layer of mustard on both waffle followed by 3-4 slices of ham and 2 slices of Gruyere cheese. Next spread about two tablespoons of béchamel sauce over gruyere then top with remaining waffles. Gently press down on sandwich so all the layer bond together. Spoon two more tablespoons of béchamel over the top of sandwich and then two slices of gruyere. Transfer baking sheet to oven for for about 5 minutes or until all the cheese has melted. Once the cheese melts switch the oven to broil and cook until cheese on top is lightly browned. Remove baking sheet from oven top each sandwich with a fried egg. Finish off with a sprinkle of scallions.
