Tip: You can make a batch of these and freeze them. Then when you’re ready to eat just thaw them on the counter for 30 minutes and pop in the oven for 8 minutes at 375 degrees.
Ingredients:
Filling:
2 apples, about 3 cups
1 pears, about 1 1/4 cups
1/2 teaspoon vanilla extract
2 tablespoon unsalted butter
1 tablespoon sugar
1/4 teaspoon cinnamon
1 teaspoon lemon juice
Batter:
1 1/4 cups flour
2 teaspoon baking powder
1/2 tablespoon sugar
1/4 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
Apple and pear filling
3/4 cups milk(if batter is too thick add 1/4 cup more)
2 eggs, beaten
Canola oil for frying
Glaze:
1 1/4 confectioners sugar
3 tablespoons pear juice or apple cider
1 tablespoon lemon juice
Directions for glaze:
Combine ingredients in a small bowl. Whisk until sugar has dissolved. Cover and set aside.
Directions for filling:
In a large skillet melt butter over medium high heat. Add apple and pears to skillet. Cooked until fruit starts to soften about 5-6 minutes. Next add sugar, cinnamon, lemon juice and vanilla extract. Stir fruit and continue cooking for 5 minutes. Transfer fruit mixture to bowl and set aside to cool.
Directions for batter:
In a large bowl sift flour and baking powder. Next add sugar, cinnamon and salt. Whisk dry ingredients together set aside. In a small bowl whisk together eggs, milk and vanilla.
Combine the wet ingredients and the dry ingredients. Mix until batter is smooth with no lumps. If batter seems to thick add a little more milk. Fold in fruit mixture.
In a Dutch oven or heavy pot heat 2-3 inches of oil to 375 degrees. Use a thermometer to get the temperature right. If the oil isn’t hot enough the fritters will absorb a lot of oil. Working in batches carefully spoon about 1/3 cup of batter into the oil. Fry until fritter reaches a deep brown color about 3 minutes then flip and cook the other side for another 3 minutes. Transfer fritters to a baking sheet with cooling rack. Continue until all the batter has been used.
Drizzle glaze over each fritter. Serve while warm.
