Shrimp toast is always one of the first things I look for when I’m at a good Chinese takeout restaurant. Crispy fried bread with small chunks of shrimp, fresh scallion, cilantro and hints ginger these tasty appetizers will change you life.
Ingredients:
1/2 pound shrimp, peeled and deveined
2 scallions thinly sliced
1 egg white
2 tablespoon cilantro
1 tablespoon toasted sesame oil
2 teaspoons soy sauce
1 clove of garlic roughly chopped
2 tablespoons fresh ginger peeled
3 tablespoons black sesame seeds
8 slices of white bread, cut off crust and slice diagonally
Salt and white pepper
Oil for frying
Sriracha mayo(optional)
Directions:
Place shrimp, scallions, egg white, cilantro, sesame oil, soy sauce, garlic, and ginger in food processor and pulse until it forms a chunky paste. Remove paste from food processor and place in small bowl. Spread paste evenly on each slice of bread. You should have 16 pieces. Sprinkle each slice with sesame seeds. In a large pan heat 2 inches of oil to 375 degrees. When oil is ready place toast shrimp side down and cook for about 3 min or until paste is lightly browned, then flip and brown other side for 2 minutes. Be careful not to overcook bread browns very quickly. Place toast on paper towels to drain oil. Serve with Sriracha Mayo.
