Crispy Scallion Waffles

I’m using these scallion waffles for my Croque Madame Waffle recipe but they’re also go great with cheesy scrambled eggs or smoked salmon and creme fraiche.

2 cups milk
1/4 cup warm water
1 1/2 cups all purpose flour, sifted
1 teaspoon sugar
1/2 teaspoon white pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 packet dry active yeast
1 1/2 teaspoons salt
7 tablespoons unsalted butter, melted
1/2 teaspoon baking soda
2 eggs separated
1 1/2 cups scallions, thinly sliced

In a small bowl whisk together warm water and yeast. Set aside. After about 7-10 minutes the mixture will become foamy.

In a large bowl combine flour, sugar, salt and pepper.

Next add milk, butter and yeast mixture together.

Slowly pour wet ingredients into large bowl with dry ingredients. Whisk until well combined. Cover batter with plastic wrap and place in the refrigerator overnight.

When you’re ready to make waffles remove batter from refrigerator. Using a hand mixer to beat egg whites to stiff peaks. Set aside.

Whisk egg yolks, scallions and baking soda together in small bowl. Then fold mixture into batter. Next gently fold in egg whites.

When waffle maker is hot spray with cooking spray. Then carefully add batter using a ladle or measuring cup. The length in with to cook your waffle depends on what type of waffle make you’re using.

When the waffle are browned and crispy on both side remove them and serve immediately.
