Beer Braised Chicken Sausage and Onions

Whether at home on the couch or in the parking lot of your favorite teams stadium these chicken sausages are the perfect game day snack. Braising your sausages and onions in beer adds a bold caramelized flavor that goes great with… You guessed it an ice cold beer.


2 large sweet onions thinly sliced
8 chicken sausage
2 tablespoons butter
1 16 ounce larger beer
8 brioche hot dog buns
Spicy brown mustard

Place large cast iron pan on grill over high heat. Melt butter until its about to brown then add onions. Cook onions for about 8 minutes until they soften. Pour in beer and stir. Cover onions and let cook for 10 minutes over indirect heat. Oil grill grate and carefully place sausages on grill. Brown sausages on all sides. Once sausages are brown transfer them to pan with beer and onions let cook for 10 minutes. Remove for heat. Lightly toast brioche buns on grill. Serve sausages on brioche with onions and spicy mustard.
