Roasted Cauliflower White Pizza

We’re skipping the tomato sauce this time and going all white for this easy pizza recipe. Turns out cauliflower is the topping you never thought you needed but won’t be able to live without after trying this pizza.

Ingredients:

2 cups ricotta
1 cup fresh basil
3 cloves garlic, grated
2 cups small cauliflower florets
3 tablespoon olive oil
2 cups shredded mozzarella
1 store bought pizza dough, about 10 ounces
Flour for dusting
Salt and pepper

Directions:
Preheat oven to 400 degrees. In small bowl toss cauliflower with one tablespoon of olive oil, salt and pepper to taste. Spread cauliflower on a baking sheet. Roast for 25-30 minutes. Remove from oven and set aside to cool.

Preheat oven following instructions on dough packaging different brand use different temperatures. In small bowl mix garlic and olive oil. Dust 13X9 inch baking sheet with flour and roll out dough to 12 inches. Use fork to poke holes in the dough to prevent bubbles. Leave 1/2 border for the crust. Spoon garlic oil all over dough. Next spread mozzarella over dough leaving 1/2 inch boarder. Place florets around the dough leaving space between each piece. Spoon teaspoons of ricotta around pizza. Bake pizza for 15 minutes or until crust is golden brown.
