No more soggy fries!

Over the years I’ve cooked French fries using just about every technique known to man. But this recipe by far has given me the best results. Boiling the the potatoes before frying pulls out all the unwanted starch and leaves you with the crispy crunchy fries you always dream about. Don’t forget to try them out with my amazing dipping sauces!

Ingredients:

2 russet potatoes, cut length wise ½ inch thick
Oil for frying
Salt
Dipping Sauce(recipe)


Directions:
In a medium saucepan bring about 4 cups of water to a boil. Season water with salt. Add potatoes to water and cook for 6 minutes. Be careful not to overcook!! Drain water and transfer potatoes to paper towel. Let the potatoes cool to room temperature.

When your potatoes have cooled heat oil to 375 degrees in large pan. Fry potatoes until golden brown. Transfer fries to with slotted spatula. Salt and serve immediately.
