This recipe can be done entirely in the oven but it’s even better when finished on a grill. The slight char and smokiness adds a wonder flavor to the lamb ribs.
Ingredients:
2 racks lamb ribs
1 tbsp ground cumin
1 1/2 tsp kosher salt
1/2 tsp white pepper
1 tsp chili flakes
1 tsp garlic powder
1/2 tsp cumin seed, crushed
1/2 tsp smoked paprika
1/4 tsp ground cinnamon
2 tsp olive oil
Directions:
Preheat oven to 300 degrees.
In a small bowl combine all ingredients except ribs. Transfer ribs to a large roasting pan. Rub ribs with seasoning mixture. Place in oven and roast for 2 1/2 hours.
At this point you can raise the oven to 425 degrees and continue roasting for 20-25 minutes or transfer ribs to charcoal grill and finish them over fire.
Heat grill to medium high. Cook ribs for 10-15 minutes turning every few minutes. Remove from grill. Cover with foil to rest for 5 minutes. Slice right before serving.
