Grilled Cumin Lamb Ribs

Lamb ribs are already a favorite for most meat lovers but when seasoned with the earthy, aromatic warmth of cumin, they become something extraordinary. This recipe can be done entirely in the oven but it’s even better when finished on a grill. The slight char and smokiness adds a wonder flavor to the lamb ribs.

Ingredients:
2 racks lamb ribs
1 tbsp ground cumin
1 1/2 tsp kosher salt
1/2 tsp white pepper
1 tsp chili flakes
1 tsp garlic powder
1/2 tsp cumin seed, crushed
1/2 tsp smoked paprika
1/4 tsp ground cinnamon
2 tsp olive oil


Directions:
Preheat oven to 300 degrees.

In a small bowl combine all ingredients except ribs. Transfer ribs to a large roasting pan. Rub ribs with seasoning mixture. Place in oven and roast for 2 1/2 hours.

At this point you can raise the oven to 425 degrees and continue roasting for 20-25 minutes or transfer ribs to charcoal grill and finish them over fire.

Heat grill to medium high. Cook ribs for 10-15 minutes turning every few minutes. Remove from grill. Cover with foil to rest for 5 minutes. Slice right before serving.
