Pork Belly BLT

“A little twist on a classic”

Serves 4    Time 30mins

1/2 pound pork belly, sliced 1/4-inch thick

4 sourdough roll, halved

2 large beefsteak tomatoes, sliced thick

1 head baby butterhead lettuce

Pesto mayo(recipe here)

Salt and pepper

Directions

Preheat grill to medium heat. Season pork bell with salt and pepper on both sides. Grill pork belly until browned and crispy. About 8 minutes. Drain pork belly on paper towel. Toasted both sides of sourdough rolls 1 minutes each side. DON’T BURN! Spread generous amount of pesto mayo on both side of rolls add pork belly slices and top with lettuce and tomatoes.
